Mary’s Italian Pasta Salad

This Italian Pasta Salad recipe is made with the perfect combination of chopped cucumber, tomato, artichoke hearts, black olives plus big fresh cubes of cheddar, mozzarella, genoa salami, and a zesty Italian dressing to top it off.

I’m so grateful to have been given this family recipe from my boyfriend’s Italian mama, Mary!

This was a staple in their household and was a great way to feed her 4 hungry sons.

It’s the perfect thing to make at the beginning of the week, store in a big bowl with a lid and snack on whenever you get hungry.

A few suggestions from Mary:

  • Cut each ingredient into equal size (preferably cube) shapes
  • On day 2 or 3 of storing in the fridge you may want to add more Zesty Italian Dressing to the bowl

Italian Pasta Salad

Rotini pasta mixed with freshly chopped veggies, cubed genoa salami, mozzarella cheese, cheddar cheese and zesty Italian dressing!

Ingredients

  • 1 Box Rotini Pasta
  • 1 Medium Cucumber, cubed
  • 10-15 Small Cherry Tomatoes, halved
  • 1 Can Artichoke Hearts, lightly chopped
  • 1 Can Black Olives, halved
  • 1 1-inch thick slab Genoa Salami, from deli
  • 1 1-inch thick slab Mozzarella cheese, from deli
  • 1 1-inch thick slab Cheddar cheese, from deli
  • 1 Bottle Zesty Italian Dressing
  • Garlic Powder, Oregano, Basil, Salt & Pepper

Instructions

  • Cook pasta according to box instructions, set aside to cool.
  • Peel cucumber and chop into cubes, halve tomatoes, drain and chop artichoke hearts, drain and halve black olives. Cut salami and cheeses into equally sized cubes.
  • Place pasta into a large bowl and mix all ingredients together – adding your preferred amounts of each ingredient along the way!
  • Add a few shakes of garlic powder, oregano, basil, salt & pepper. Taste & adjust to your liking. Enjoy!

Notes

*If you’re in a hurry you can place the cooked pasta in the freezer to speed up the cooling process
*Go to your grocery store deli counter and ask them for the 1-inch thick cuts of Genoa Salami, Cheddar Cheese and Mozzarella Cheese
*I usually use 1/2 a bottle of Zesty Italian Dressing
