  • 1 large avocado peeled and pitted
  • 2-3 garlic cloves peeled
  • 1 lemon zest + juice
  • 5 oz feta cheese
  • 1/4 cup packed fresh basil
  • 1/4 cup packed fresh mint
  • 1/4 cup fresh chives
  • 2 tbsp fresh dill
  • 1/4 cup olive oil
  • 1 tsp dijon mustard
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions

  • Add all ingredients to a high-speed blender or food processor.
  • Blend until smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste.
  • Transfer to a serving bowl and garnish with a drizzle of olive oil, extra feta crumbles, and fresh herbs if desired.
  • Serve with toasted bread, crackers, or fresh veggies.

Notes

  • Optional: Chill for 20–30 minutes before serving for a thicker texture and more developed flavor.
  • This is a thicker, dip-style version. To use as a dressing, thin it with water or olive oil until pourable.
  • Use high-quality feta and olive oil for the best flavor.
