Ingredients
2 lbs baby potatoes (mix of yellow and red) halved
7 oz feta cheese crumbled
1/2 red onion thinly sliced
3 tbsp capers chopped
1/4 cup extra virgin olive oil
1 lemon (zest + juice) + more for serving
salt + pepper to taste
2 tbsp fresh parsley chopped
1 tbsp fresh dill chopped
1/2 tsp dried oregano

Instructions
1. Bring a large pot of water to the boil and add salt. Slice potatoes in half. Add the potatoes to salted boiling water and lower heat to a simmer. Cover the pot and cook for 20 minutes until fork tender.

2. While potatoes cook thinly slice the red onion and chop capers, parsley and dill.

3. Spread the potatoes out on a platter to cool.

4. Sprinkle the potatoes with capers, feta and red onion. Drizzle all over with olive oil and the juice and zest from one lemon. Season with salt and pepper, to taste.

5. Finish them off with parsley, dill and oregano. Serve with extra lemon wedges.

Let’s have an elegant spring🌷 Recipe👇

Ingredients
14 oz hummus
4 oz salami
Marinated chickpeas (I get mine at Trader Joe’s)
2 tbsp extra virgin olive oil
1 tsp paprika
1 tsp dried oregano
Mint leaves for garnish
Baby carrots, cucumber, and pita chips for serving

Step 1: Prep Your Hummus
Use 14 oz of your favorite hummus. You can make your own (see my classic hummus recipe) or use high-quality store-bought hummus.

Step 2: Make a Salami Rose
Use a champagne flute or small wine glass. Fold each piece of salami over the rim of the glass, overlapping slightly. Repeat until the glass is filled. Gently flip the glass to release the rose onto a plate.

Step 3: Create the Hummus Flower
Transfer hummus to the center of a large round plate. Using the back of a spoon, drag from the center outward in petal-like strokes to create 11 “flower petals.” Press down gently to form ridges without scraping the plate.

Step 4: Assemble and Garnish
Place the salami rose in the center of the hummus flower. Add marinated chickpeas around the rose. Garnish with a drizzle of olive oil, paprika, dried oregano, and mint leaves.

Step 5: Serve
Serve your hummus plate with crisp baby carrots, cucumber slices, and pita chips for dipping. Arrange everything on a wooden board or round platter for a beautiful presentation.
