WHAT INGREDIENTS DO I NEED?
Fresh strawberries – the star of the show. Buy the freshest, ripest batch you can find!
Ladyfingers – found in most major grocery stores in the baking or bakery section. You can also order them online.
Strawberry preserves – are essential to help soften the ladyfingers and enrich the whole dish with even more strawberry flavor.
Orange juice – combined with the preserves makes the most delicious mixture.
Mascarpone – found in most major grocery stores in the deli area near the cheese. Make sure to allow the mascarpone cheese to rise to room temperature.
Heavy whipping cream – ensure you start with chilled heavy whipping cream to get perfectly whipped cream.
Powdered sugar – sift the powdered sugar to avoid clumps in the cream filling.
Vanilla extract – infused with the mascarpone makes a velvety and perfectly sweet filling.
HOW TO MAKE TIRAMISU WITH STRAWBERRIES
Whisk together preserves and juice: In a wide bowl, whisk the strawberry preserves and orange juice, set aside.
Mix whipped cream: Using an electric mixer, beat chilled whipping cream, sifted powdered sugar, and vanilla extract in a large bowl to soft peaks.
Prepare mascarpone filling: Place mascarpone in another large bowl and stir in ½ of the whipped cream mixture to lighten. Fold in remaining whipped cream mixture, until smooth and velvety.
Prepare strawberries and ladyfingers: Hull and slice half of the strawberries. Dip the ladyfingers in the strawberry and orange juice mixture on both sides to coat entirely.
Once dipped, place on the bottom of an 11 x 8 dish or equivalent. Arrange enough dipped ladyfingers to cover the bottom of the dish.
Layer and repeat: Spread half of the mascarpone filling over the top, followed by the sliced strawberries in an even layer.
Repeat: with one more layer of dipped ladyfingers and pour the remaining strawberry preserve mixture over. Spread the rest of the mascarpone filling over the top in a nice even layer.
Cover and chill: Cover with plastic wrap and chill overnight (at least 8 hours).
Top tiramisu with strawberries and serve: Hull and slice the rest of the fresh strawberries. When ready to serve, arrange neatly over the top of the tiramisu.
TIPS FOR MAKING TIRAMISU WITH STRAWBERRIES
- 1-day in advance: always prepare tiramisu one day in advance so the ladyfingers absorb the strawberry mixture completely and reach the optimal soft texture.
- Ladyfingers: use hard Italian ladyfingers with a sugary top, often called Savoiardi.
- Strawberries: to pick the freshest strawberries, make sure to pick ones that are completely red with no hints of white or green.
- Mascarpone: some recipes substitute this for cream cheese which changes the consistency and is not recommended here. Mascarpone is commonly found in grocery stores in the deli section near the cheese.
RECIPE VARIATIONS
Alcohol – my family always made tiramisu with strawberries with orange liqueur but I chose to leave it out due to preference, cost savings, and so more people could enjoy the recipe.
If desired, you can substitute half of the orange juice for an orange liqueur such as Cointreau.
Berries – this recipe would be delicious with any berry. Blueberries are a common addition.
Toppings – top the tiramisu with strawberries and some white chocolate shavings or a dusting of cocoa powder.
